Something To Guac About: The All-Time Best Guacamole Recipe

if there's anything in this world that one can't go wrong with, it's guacamole. it makes any situation better. if i'm at a party and someone i hate is there, but guacamole is present, i will hate that person less by default. i don't really hate that many people, so this isn't a situation i encounter that often, but nonetheless it's the truth. it's a universal language.

i'm one of those people who tells myself that since guacamole is like 85% avocados, it's extremely healthy and it's definitely fine to eat a shit ton of it every time. since we all know the store bought kind can be nasty and brown, i'm always a big fan of making guac at home. and now that football season (and the holiday season) is in full swing, i figured it might be a great time to share my all time favorite recipe for homemade guac. 

Elote- one of my favorite restaurants i've EVER been to in Sedona, AZ- has a simple, awesome recipe. this is the only thing i've had the balls to tackle from their cookbook so far, but the rest of it looks incredible if you're interested in venturing beyond into the realm of gourmet enchiladas and stuff. for now, the guac:

so here's the recipe:

ELOTE GUACAMOLE

makes 4 cups

3 medium ripe avocados

1/4 cup finely diced onion

juice of half a lime

2 tablespoons of chopped fresh cilantro

1/4 teaspoon of kosher salt

1/4 teaspoon of fresh ground pepper

1 jalapeño, stemmed and finely diced

chopped tomato, queso fresco, and radishes to garnish

crisp-friend corn tortillas for serving (or red hot blue chips which is what i use because they are the bomb)

instructions: 

cut the avocados in half. remove the pits and scoop the flesh into a bowl. add the onion, lime juice, cilantro, salt, pepper, and jalapeño and roughly mash it all together. top with garnishes to your taste and serve with corn tortilla chips for scooping.

this recipe is my all time fave. it's SO worth it to make it yourself. also, if you're ever in Sedona, make the trip to Elote because it's one of the most amazing Mexican restaurants I've ever been to in my life. seriously incredible.
