Blueberry Rosemary Spritz Cocktail

Since everyone collectively took a journey through a global pandemic, I’d be lying if I said that our liquor cabinet hasn’t grown quite a bit.

Hey guys, Courtney here. This past weekend, the weather in NYC exceeded 90 degrees, which meant that fruity spritzers replaced heavy IPAs and sundresses replaced sweatpants.

I’d been craving an easy-to-make, yet kind of bougie summer cocktail, and stumbled upon this Blueberry Rosemary libation on Coley Cooks.

Made with fresh blueberries, rosemary, vodka, lemon, simple syrup, and club soda, this cocktail is refreshing and delicious sans the insane amount of sugar that my usual go-tos come with (although I am always down for a pina colada).

I love that it comprises fresh produce and comes out a bright, pink/purple color. I made these on Friday night before dinner, and by Saturday at 1pm, I was already in the mood for another one (don’t judge, haha). 

The recipe below makes two cocktails, so double everything if you’re having seconds or guests.

Blueberry Rosemary Spritz Cocktail Recipe

Ingredients:

  • ½ cup of fresh blueberries (plus a few more for topping)

  • 4 sprigs of rosemary

  • Juice of 1 lemon

  • 4 ounces of vodka

  • 4 tsp. Of Simple Syrup

  • 1 can of club soda (8 ounces)

  • Ice 

Directions:

  1. Muddle blueberries and two sprigs of rosemary in the bottom of a cocktail shaker.

  2. Add lemon juice, simple syrup, vodka, and ice. Shake vigorously. 

  3. Add ice to cocktail glasses and strain mixture over top.

  4. Top with club soda.

  5. Garnish with a few blueberries and remaining rosemary.
