Easy Lemon Puff Pastry Recipe

Spring is finally here! The weather in NYC is starting to get warmer and I’ve officially put away my winter coat for the season (although I have been known to wear my winter hat well into April…).

Courtney here! In addition to putting away my winter clothes, I transitioned from baking rich, chocolatey cakes and pumpkin pies to light, fresh pastries and fruity treats. I’m doing all I can to channel warm weather and the hope of a more “normal” summer, so today I’m making an easy lemon pastry.

Homemade Banana Oat Granola Bars

Hey, everyone — Courtney here! Raise your hand if you promise yourself that you’ll give yourself enough time to eat a solid breakfast in the morning and then actually never do.

I definitely do this, and always end up snagging a granola bar on my way out the door. 

Since most of my favorite granola bars either taste like chocolate candy or cost $3 per bar, I decided to start making my own.

Lightly sweetened with mashed banana and honey, these whole wheat banana oat bars are the perfect on-the-go breakfast. My fiancé and I have actually been eating them for dessert, too :)
