Homemade Banana Oat Granola Bars

Hey, everyone — Courtney here! Raise your hand if you promise yourself that you’ll give yourself enough time to eat a solid breakfast in the morning and then actually never do.

I definitely do this, and always end up snagging a granola bar on my way out the door. 

Since most of my favorite granola bars either taste like chocolate candy or cost $3 per bar, I decided to start making my own.

I found a recipe on Five Heart Home that I love, and if I can time my banana ripeness well, I opt to whip these babies up on Sundays so I have them for the week.

Lightly sweetened with mashed banana and honey, these whole wheat banana oat bars are the perfect on-the-go breakfast. My fiancé and I have actually been eating them for dessert, too :)

If you want to make them sweeter or more robust, feel free to add in chopped nuts, chocolate chips, or even drizzle them with a little nut butter.

Here’s the recipe!

Ingredients:

Originally from Five Heart Home

  • 3 small (or 2 medium) overripe bananas, mashed

  • ½ cup coconut oil melted and cooled

  • ⅔ cup of honey

  • 1 egg, beaten

  • 2 tsp. vanilla extract

  • 2 ½ cups rolled oats

  • 1 ¼ cup whole wheat flour

  • ½ tsp cinnamon

  • ½ tsp salt

Optional: Add ¼ cup chopped nuts or chocolate chips :)

Directions:

  1. Preheat oven 350 degrees and grease a 9x13 baking dish with cooking spray or coconut oil.

  2. Beat together banana, coconut oil, honey, egg, and vanilla.

  3. In a separate bowl, mix together oats, flour, cinnamon, and salt. Blend into banana mixture until combined.

  4. Pour batter into baking dish and smooth out to even thickness. 

  5. Bake for 18-22 minutes or until edges begin to brown. Let cool for 10 minutes before slicing into bars!

  6. Refrigerate for 3-5 days and enjoy!
